Erm . . . it shouldn't matter if Mina is legally --technically or otherwise-- an adult and, thus, can sign legally-binding contracts. But it's the Count's castle, not hers. So how can she gamble away something that, she, herself, doesn't own?

Unless the Count signed over title to it to her. Ironically, he might have done that in order to prevent something like this from happening, so that, if he died (staked, caught in the sun etc.) the castle would automatically pass to her, istead of, say, any other undead realtives (assuming he has any) or being up for grabs by the state as abandoned property.
