Oh you can do it, me and Zath do Varus/Blitz bottom a lot and we've gone against our mirror-match dozens of times, last night it was literally the same summoner skills and skins too. (Piltover Customs Blitzcrank and Blight Crystal Varus)
If your enemy is uncoordinated and you dodge hooks well, you can easily beat them.

A good tactic is for your blitzcrank to level up his W evenly with his E so that instead of relying on a lucky hook, you can just rush your way through the creeps.
Another fun tactic is to have Varus start his Q and make them dodge outta the way: Into the waiting hook of a blitzcrank.

You would not believe how many times people have seen me (varus) charging a Q and watching enemies forsake the safety of minions only to realize too late that the real threat came from that blitz who was waiting in the bushes.

Just played a match as Ziggs in mid. Noticed I was up against a Vlad, who has a LOT more lane sustain than I do, so I go hard on the bombs so his heals are less effective. Ten minutes in, he switches lanes with Ashe, I get fed, and he complains to his team for the rest of the game, all while I'm being chummy with the lot of them.
