Carne al pastor is an evolution of the shawarma that, unlike the former that uses a mixture of meat types) chooses to use raw beef and a special, heavily condimented red sauce used to smother the beef with before putting it in the trompo. The name comes from the spanish term "pastor" used for "steppe shepherds" (the religious "pastor" here in mexico is simply called "father" or "priest", there is no such a thing as a religious "pastor" here, and carne al pastor has an emphasis in the o. Pastór.).

Also there is no such a thing as a "burrito al pastor", that's just a fancy taco that uses a flour based tortilla instead of a corn based one. :v

Oh my god you've missed out. If you ever come to California, go to a place called "Manuel's El Tepeyac" in East LA. Probably the best Mexican food in the Greater LA area.
