The crystals arent synthesized, with few exceptions, if you read the sequelae novels, expecially the Jedi Academy series, shows in detail how lightsabers are made, as well as the Knights of the Old Republic series.
And yes, the crystals do determine lightsaber color by regulating the light frequency to a controllable form, the crystals composition determines how far the light is bent and thus, its color, youll notice that even Lucas took this into account, Lukes blue lightsaber was narrower than Vaders red one.
