Right now I'm ranking the final love interest as Mimi, Nobody, Minnie, Someone else. Personally I would prefer nobody over Mimi to highlight the existence of something greater then the characters.


With regard to Mimi, her lack of speech plays very little into the outcome in my opinion. Just because she can't talk doesn't mean she can't communicate feelings. Mimi is tough and if she wants to be understood she can.
With regard to Minnie, the reason you gave is exactly why Minnie won't end up with Junior. It's a bad relationship. Minnie is crazy about Junior. She can't possibly give the kind of responsiveness that is required from a life long partner. As example look back at Pale Rider. Minnie was opposed to going until Junior promised she could sleep with him, then Minnie changes her mind. Minnie shows insane weakness here. She gave up her opinion for the promise of a night with Junior. If her opinion can be overturned so easily then this becomes a one sided relationship. Also note that Junior is bribing Minnie, something that should never happen in a good relationship.
Now the fact that the relationship is unhealthy doesn't mean that it won't happen; however, look at the broader picture here. This is a coming of age story for Junior (It's almost guaranteed). Junior is going to grow up and learn about the important things in life, and this includes being able to spot a bad relationship.
Until Minnie can become a stronger person, and find a real reason to love Junior. She has no chance.

Or she still thinks the same way, but seeing that her-bro-lying-on-her thing happened accidentally, Minnie just takes advantage of the situation, without implying her feelings for her bro.
